Elote (Mexican Street Corn) Recipe

As we’re soaking up the dog days of summer and the final month of corn season, I wanted to share my super savory elote recipe with you. Elote is the Spanish word for corn-on-the-cob and is the name of this delicious dish that’s typically served as street food in Mexico. Elote originated on the streets of Mexico City and is often served with the corn cob on a stick, but you can just eat it as you would normally eat corn-on-the-cob. This Mexican street corn recipe is full of flavor and is the perfect backyard barbeque dish to savor some of the delightful flavors of Mexico in the final days of summer. 

*You can make this recipe vegan by using Vegenaise and a vegan cheese like Violife Feta*



Ingredients:

  • 4 ears of corn

  • 1/4 cup mayonnaise

  • 1/2 cup crumbled cotija cheese (can sub parmesan cheese if necessary)

  • 1 lime

  • Chili powder to taste (I love using Tajín because it has the salt component already included)

  • Salt to taste

  • 1/4 cup chopped cilantro

Instructions:

  1. Prepare corn on the cob as you normally would by boiling or grilling.

  2. Let the corn cool to the touch then use a pastry brush to apply mayonnaise.

  3. Coat on the cotija cheese

  4. Squeeze lime on the corn

  5. Sprinkle on the chili powder and salt to taste

  6. Top with cilantro
